Cold pasta salad recipes are a staple for any summer picnic or family gathering. We found a good one and wanted to share it with all of you! This is so easy to make and it isn’t something you normally see. Your family and friends will be begging you to bring it again to the next gathering!
So imagine if you will, a beautiful sunny Saturday afternoon in the summer. You are on your way to a picnic of some kind. It doesn’t matter really, could be family or friends. Perhaps it’s a company picnic filled with co-workers.
Looking for Cold Pasta Salad Recipes? I promise you will love this!
On the invitation, it said, “Bring a dish to share”. Now you could keep it simple (and rather boring) and just pick up a potato salad or coleslaw from the store. Why not right? It’s cheap, easy and you’re not trying to impress anybody….. or are you?
If you are trying to stand out give this delightful salad a try. This is literally summer in a dish and everyone is going to be asking you for the recipe.
Here are the ingredients for this delectable dish with a photo to simplify things
- 1 lb. of Ditalini Pasta (Ditaliini is a pasta variety that is very short and shaped like little tubes)
- 5 oz. package of dried sweetened cherries
- 5 oz. package of dried sweetened cranberries
- 15 oz. bottle of Poppyseed dressing
- 3-4 celery stalks chopped
- 1/4 small onion finely chopped
Bring 4-6 quarts of water to a medium boil. Add the entire box of pasta and boil for 10 minutes or until pasta is tender. I always like to test the pasta before stopping the process. Drain well and add pasta to a large bowl. Fold all of the remaining ingredients above and make sure everything is thoroughly mixed together. That’s it! You are done, the dish can now be eaten while it’s still warm, but if you’re looking to serve it cold I would put it in the refrigerator for at least an hour.
Try these wonderful enhancements to the dish:
Make it a meal – Mix in some shredded roasted chicken. This will give you some lean protein and will keep you full for hours.
Spice it up – Add in some diced jalapeno or cayenne pepper for some heat. Cayenne Pepper goes perfectly with these types of pasta dishes. In fact, GO HERE to see even more incredible cold pasta salad recipes!
Other add-ons – Consider adding some cubed mozzarella or cheddar cheese to the dish. Certainly, this will enhance any pasta dish and nobody will object.
Pairs perfectly with a fine Chardonnay!
