Dill Pickle Pasta Salad

This is one of my favorite summer recipes and I am so happy I get to share it with you! This dish screams summer party or gathering! My wife came across this somewhere a few years back and it has been a huge hit for our family ever since! This pickle pasta salad dish is not only great at home, but it is always a very simple dish to bring when going to any summertime event!

Dill Pickle Pasta Salad

What you need:

1/2 pound of dry shell pasta (3 cups)

3/4 cup sliced pickles

2/3 cup cheddar cheese – cubed

3 tbsp white onion

2 tbsp fresh dill

1/2 cup pickle juice

Dressing:

1/3 cup mayo

2/3 cup sour cream

1/8 tsp cayenne pepper – (I personally think this makes the dish! If I am making it for just me I might even add a little more. However, if kids are having this or someone that doesn’t like heat you won’t need to add more, in fact, you could even add a little less).

4 tbsp pickle juice

Salt and Pepper to taste

The Recipe is Simple

  1. Cook the pasta in salted boiling water according to package instructions.
  2. While pasta is cooking add chopped pickles, cheese, onion, and dill to a large bowl and set aside.
  3. Drain the cooked pasta from water and rinse under cold water. Add 1/2 cup pickle juice to the pasta and let sit for 5 minutes.
  4. Prepare the dressing by combining mayo, sour cream, pickle juice, and cayenne pepper in a separate dish. Whisk to combine.
  5. Drain pickle juice from the pasta and add pasta to the large bowl along with the dressing. Toss to combine all ingredients. Add salt and pepper to taste.
  6. I find it best to make this at least a couple hours ahead of time and refrigerate. It is best served cold and you really want the flavors to marinate together.
