Simply The Best Slow Cooker Pot Roast Recipe With Red Wine – Super Easy

Sunday afternoons in the fall and winter are made for some type of meal in the slow cooker or crockpot. Especially where I’m from when the temperatures start to drop let’s say by mid-October there is nothing like throwing one of your favorite dishes in the crockpot and letting it cook all day. Well, today I would like to share one of the best slow cooker pot roast recipes with you.

I discovered this recipe just last week and because of its simplicity, I was instantly drawn to it. Not too mention, I already had most of the ingredients at home, which made my trip to the store very easy. Once you taste it I am sure this will become one of your new favorites too!

Since we were already opening a bottle of wine for the recipe, we decided to invite another couple over and turn this dinner into a wine event! Sometimes life is all about what you make of it. We put on some music and told our kids we were having a party.

When our guests showed up the stage was already set for a fun evening. The roast which had been cooking all day was done and I had two glasses of wine poured and ready upon their arrival. All we had to do was eat and enjoy ourselves.

We told some stories, played some games and turned what would have been an ordinary dinner into a wine event that will be remembered by all of us for quite some time.

What you will need to make this best slow cooker pot roast recipe

So here is a list of the ingredients you will need:

  • 3.5 boneless beef chuck roast
  • 1 onion
  • 2 – 14.5 ounce cans diced tomatoes
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 2 cups of fine red wine (they always say when cooking with wine use something you would drink. Why use an ingredient that you don’t enjoy? GO HERE to see where we get our wine.
  • 1 cup of beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried thyme
  • 1 tablespoon dried rosemary
  • 4 cloves of garlic
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil

Directions:

Season the roast well on all sides. If possible, do this the night before and place in the refrigerator overnight. For this step, I just use good old fashioned salt and pepper. There is going to be plenty of flavor from all of the other ingredients during the cooking process, so there is no need to overdo it with the initial seasoning.

When you’re ready to begin, start by placing some of the onions and garlic in the bottom of the crockpot so the underside of the roast is in contact with them during the cooking process. Then, simply take the roast out of the refrigerator and place in the crockpot on low. Throw the remainder of the onions and garlic on top of the roast and along the sides.

Then in a large mixing bowl lightly whisk together the red wine, beef broth, diced tomatoes, Worcestershire sauce, rosemary, oregano, basil, thyme. If you wish you can add a pinch of salt and pepper, but there should be plenty already in the dish from the roast itself. Pour the mixture over the roast, cover and cook on low. Cook until the roast is starting to fall apart. This should take about 5 – 8 hours depending on your crockpot.

Note: This is totally not necessary, as it defeats the purpose, but I like to turn my roast over and stir things around every couple of hours.

The wine we used for this occasion was from our wonderful wine of the month club! For this event, we chose to use a California Red Blend called Lazy Lab Bourbon Barrel. Not only did we use it as an ingredient in the cooking, but we also paired it with the food to make the experience even better and more delicious. Our friends liked it so much they even offered to purchase the last bottle from our inventory.
